Lemon and Elderflower Marmalade

To make this marmalade you first need to make the elderflower cordial, I have invented this recipe to use up the lemons that are so wonderfully flavoured with the elder flowers, it seems such a waste to bin them when they can be made into this delicious marmalade.

I make it by covering the lemons in a half water and half elderflower cordial and cook until they are tender and slightly caramelized.
Now weigh them and add the same weight in sugar

Bring to the boil (110c)  and continue at a rolling boiling  until setting point is reached. This can be checked by the cold plate test, put a teaspoon of marmalade on the plate and let it cool, if it wrinkles when you push your finger against it, it is at setting point.

Bottle in clean and sterile jars.

Label and date.

    The Elderflower Cordial was well up to standard but the marmalade afterwards was bl:::::dy super The best marmalade Ive made .Pity Elderflowers ans seville oranges dont come at the same time . Have you all tried Elderflower fritters, dip flowers in very light batter deep fry allow to cool and cover with sugar—cream—strawberrys etc wash down with a gin and elderflower and watch the world go by. edward

    Wow, This stuff tastes divine and is so easy to make. I’ve not really made jam/marmalade before and wsa surprised by how good is is. Looking forward to making some more soon.
    I bottled this up last night. My cordial had gone a bit fizzy before bottling, so I’m not sure how good the cordial will be. It certainly gave the marmalade a lovely flavour though.

    I’m so happy that you like it, my Mom and I do too. I think the cordial is starting to ferment and I have stopped this in ‘ginger beer’ by putting it in the fridge but as a rule I put my cordial in the freezer and defrosted it as I use it.     You need to get some campden tablets for preserving your cordial if it’s going fizzy – this fixes the syrup and stabilises it. It might mean that you’re storing it in a warm place and the yeasts are re-fermenting – causing it to make a champagne-like prickle.

    Now, this is not necessarily a BAD thing – elderflower champagne would be delicious – but be careful. I read about some exploding bottles on another blog.

    I made some cordial with 2 sevilles and 1 lemon.The cordial is fantastic as is the marmalade . I microwaved the marmalade and served hot with dairy ice cream . Everyone enjoyed it with only one burnt tongue !!!

    Sound like a great way to use it, I used the cordial on some fresh pineapple and likewise it was fab, only thing is now can’t make any more until next year. Hey ho!

    I love the cordial and this marmalade! Its the 3rd year of making it, and we have just run out of both from last year. I love the idea of the marmalde with ice cream – what a fab idea – must try it tonight when the first batch of this years marmalade will be ready – its on the aga right now!
