Quirky Squash Soup
What can I say, we have loads of squash and masses of apples and so when I saw this recipe I just had to try and the result was well… a surprise to say the least. It has to be said, it is different but this is part of its charm. It also has the advantage of being able to be served hot in the winter ( I added the potato to give it a bit more body) or cold using summer squash for a lighter version. It’s cold out there and the squash thinks so too..
Today I have had to utilise all of one huge squash aside of the bits the frost got to first. Boo.. Decided to make some soup, just an ordinary ‘run of the mill’ vegetable soup and then inspiration, yes… risotto . It was great, and will definately make it again! Now, must try to find a better way of storing our vegetable squash through the frost. This year I think I’ll try to make a wire cage and line with straw placed in the outside shed and see if that will work . The Vegetable Plot
Today, it’s time to start planning the vegetable plot. Our aim always is to make the plot work year round, giving us something fresh throughout the seasons. Now in the midst of winter we have American land cress still going strong also Jerusalem artichokes which can be dug up when needed. The Swiss chard is hanging in there too. We had a few varieties of squash in the plot last year, which are greatly satisfying to grow and also keep well, as you can see I am still using them in the soup. We grew carrots in large planters as an experiment, in the past just sown the seeds straight into the earth but we had problems with the carrots forking and carrot fly.
