Filo Parcels with Prawn, Ricotta and Swiss Chard

This is a quick and easy to do, you can have all the ingredients bought in from the supermarket or if you have time can have a bash at making the Ricotta and using chard from your garden. I bought the filo pastry which is so easy to use, on each layer brush with olive oil or melted butter. Swiss Chard and Chick Pea Soup

Swiss chard is the first of the new greens from the garden.  I wanted to make a soup that will show it off to its best and  one that could be eaten hot or cold. In this soup you have the bitterness of greens, sweetness of coconut milk, sourness of the lime and heat from the chilli. It gives an Asian tang to our humble but well loved  Swiss chard. May Bank Holiday

Where did the sunshine go?  Why is it on bank holidays the sun wont put it’s hat on and come out to play!  Never mind we soldiered on and have managed to get a lot of the little jobs done. We have opened a new  bed,  yes another one, we needed a bit more space to put the runner beans in so thought we would experiment with an visually pretty vegetable bed in which we will grow some runner beans , swiss chard and red lettuce.  The Victorians  grew runner beans as ornamentals and so will we but we will also enjoy the produce they will bring too. Tomato Soup with Swiss Chard and Lentils

This is a lovely rich, thick and warming soup. The spices can be adjusted to your own taste so if you like things hot and spicy add more hot paprika. The tomatoes can also be of your choice, use either tinned tomatoes or fresh tomatoes and tomato puree, I used the fresh tomatoes and tomato puree. We also grow our own Swiss chard in the garden it is similar to spinach,  at this time of the year is just starting to sprout again,  fresh spinach will be fine too and at a push you could use frozen or tinned spinach or another dark green leaf cabbage chopped finely, steamed and added when cooked and the end.
